The Portuguese originally use olive oil in consuming their sardines. Hence, we call our “ Sardines” Tamban / Tawilis in Portuguese Style.

The Tamban that we have here in the Philippines is the closest to the flavor of Sardines In the North Atlantic says a Portuguese co-vendor before in one of our weekend markets.

We manufacture all of our products , we don’t have them also make the Tawilis variant  when this type of fish is available.

Our  Tawilis is a smaller fish than  Tamban. Hence, the latter is meatier.

In flavor, the Tawilis has a bit of a sweet taste to it - for most it is not noticeable.

We do not use the  freshwater Tawilis from Taal Lake since it has been considered as an endangered specie. While you can purchase in Tagaytay City, but only in a small amount.

The Tamban / Tawilis we use is a salt water fish.

The Tamban and Tawilis is not only special in one location in the Philippines but in many areas of our country because we are an archipelago.

We produce our Tamban / Tawilis in Olive Oil delicately, as we pack them within the same day we as they were caught.

We use a retort canning method  which is an industry standard system of cooking food in a glass jar without the use of preservatives.  The cap seals automatically inside the canner.

It has a long shelf life of three (03) years. Refrigerate once opened. It will last for three (03) more months. Don’t double dip! 🙂
